Method of preparation / cooking
Cut radishes into quarters or eigths (depending on size) lengthwise. Chop up spinach into shreds, and slice onion.
Heat oil to hot (use a pan that has a lid) and add mustard seeds. When the seeds jump around (careful not to burn!), add curry leaves and onions. Saute for 3-5 minutes until onion starts to brown. if you don't have curry leaves, use curry powder to taste.
Add crushed garlic, chilli and tumeric. Saute for another minute max.
Add radishes, stir and add salt to taste. Put the lid on and cook for a further few minutes until radishes soften. then remove lid and turn up heat and fry on high so that the radishes are slightly crunchy on outside.
Turn concoction out on a plate (can use a bed of rice or quinoa or millet). add the spinach to the pan and fry quickly until wilted (some seconds), then top onto the meal. And serve!
