Great soup straight from your vege garden! Especially good when the courgettes go wild and you have more than you can think what to do with!

Method of preparation / cooking
Cut leeks and courgettes into about 2 cm thick slices.
Place in saucepan and cover with water.
Bring to a boil and turn down to a medium heat and cook till vegetables are tender. About 45 minutes.
Pour into a deep mixing bowl or leave in the pan if the pan is at least 18cm deep.
Puree with a hand blendery until smooth.
Optionally add a few slices of parmesan cheese, or some scoops of plain cream cheese if parmesan is too pungent, and blend until smooth.
Salt and pepper to taste.
