Mandarin and Rhubarb Muffins

Ingredients

Mandarin 3
flour 2 cups
sugar 1/2 cup
baking powder 1 1/2 teaspoons
baking soda 1/2 teaspoon
salt 1/2 teaspoon
egg one
vegetable oil 1/4 cup
rhubarb 1 1/2 cups



Method of preparation / cooking

You need 2 teaspoons of grated mandarin peel and the juice of the mandarins, approximately 3/4 cup mandarin juice for this recipe. Finely chop the rhubarb and add to the rest of the ingredients, stir well and place into greased muffin trays and bake at 350 F for about 20 -25 minutes.
