Perfect summer drink. Mix with tonic water and a squeeze of lemon. A great mixer for the summer.
Method of preparation / cooking
Boil the water and cut the stalks up quite chunky. Put the rhubarb into the boiling water and boil under tender (it doesn't matter if you over boil them. The first time I made this I left the pot and came back to a watery rhubarb gelatin) Strain the juice through a sieve or cheese cloth. A sieve will leave a bit of rhubarb particulate which isn't going to hurt you at all. Return the juice to the pot, add sugar and stir until dissolved. Allow the juice to cool, bottle and place in fridge. Dilute to taste with tonic water, soda water or other fizz. Splash of lemon works a treat too, as does gin.
